Kenya's coffee industry operates differently from nearly every other producing country. The grading system is built around bean size, with AA representing the largest screen size (17-18). Bigger beans mean more cellular structure, more surface area during roasting, and more flavor complexity in the cup. But the grading is only part of the story. What really sets Kenyan coffee apart is the soil, the processing, and decades of government-backed research into cultivar development.

The volcanic soils around Mount Kenya are rich in phosphorus and potassium — minerals that fuel cherry development and contribute to the intense, almost savory flavor profile that Kenyan coffees are known for. Farms here sit between 1,400 and 2,000 meters, where the equatorial sun is tempered by altitude. The combination of fertile volcanic earth and high-altitude growing conditions produces a cherry that is packed with complex organic acids — citric, malic, and phosphoric — which is why Kenya AA has that signature juicy, winey acidity that no other origin can replicate.

Processing is where Kenya pulls further ahead. Most Kenyan coffees undergo double fermentation: after pulping, beans soak in clean water for 12 to 24 hours, are washed, then soaked again for another 12 to 24 hours. This extended fermentation breaks down mucilage completely and produces a cup with razor-sharp clarity. How to Brew Kenya AA Coffee
