About This Origin

The Yirgacheffe district sits within Ethiopia's Gedeo Zone, part of the Southern Nations, Nationalities, and Peoples' Region. It is a landscape of steep, forested hillsides where coffee grows under the shade of native trees — an environment that produces some of the most aromatic and complex Arabica on the planet. Ethiopia is, after all, where coffee originated. Yirgacheffe is where it became legendary.

Altitude is the engine behind Yirgacheffe's intensity. At 1,700 to 2,200 meters above sea level, cool mountain temperatures slow cherry maturation to a crawl. The extra weeks on the branch allow sugars, malic acid, and citric acid to concentrate inside the seed. The result is a denser green bean with significantly more aromatic potential than coffees grown below 1,200 meters. When you roast that bean carefully — on a Diedrich, in small batches, listening to every crack — those concentrated compounds unlock into the jasmine, lemon, and bergamot that define the origin.

Our Yirgacheffe is fully washed. After harvest, cherries are pulped and fermented in clean water tanks for 36 to 72 hours to remove mucilage, then rinsed and dried on raised African beds for 10 to 14 days. This meticulous process strips away fruit sugars and leaves only the seed's inherent flavor — which is why washed Yirgacheffe has that unmistakable tea-like clarity. Pour-over is the gold standard here — a clean paper filter lets the floral aromatics pass through without the oils and sediment that can mask delicate flavors. Use a medium-fine grind, 200°F water, and a 1:16 ratio. Bloom for thirty seconds, pour slowly, and aim for a total brew time of three to four minutes. The cup should be transparent and sparkling.

AeroPress is another excellent match, especially the inverted method. It concentrates the citrus and stone fruit notes into a punchy, vibrant cup. Standard drip machines also work well with fresh Yirgacheffe — the key is using water just off the boil and grinding immediately before brewing. Skip the espresso machine for this one; the pressure and short extraction time compress the flavor range and lose the florals.
