About This Origin

Costa Rica is one of the few countries in the world that legally mandates the cultivation of only Arabica coffee. There is no Robusta here — the entire national output is specialty grade or very close to it. Within Costa Rica, the Tarrazú region in the San José province has earned the strongest reputation. The valley sits at 1,200 to 1,900 meters, surrounded by the Talamanca mountain range, and benefits from a distinct dry season that allows for careful, controlled drying after harvest.

What makes Tarrazú unique is the intersection of volcanic soil and micro-climate. The soil here is deep, well-drained, and rich in organic matter from centuries of volcanic activity. Coffee roots reach deep into this mineral layer, drawing up nutrients that translate directly into cup sweetness. The region's climate — warm days, cool nights, and a reliable rainy season followed by a dry period — creates a growth cycle that encourages slow, even cherry maturation.

Our Tarrazú lot is processed using a honey method, where the outer skin of the cherry is removed but a portion of the sticky mucilage is left on the bean during drying. This retained fruit layer ferments gently as the bean dries on raised beds over two to three weeks, imparting a caramelized sweetness and body that pure washed coffees lack. Some lots use a traditional washed process for even brighter acidity. Both approaches produce an exceptionally clean cup — Costa Rican processing standards are among the highest in the world.

Costa Rica Tarrazú is the kind of coffee that makes you slow down and pay attention. The aroma is inviting — toasted almond and brown sugar with a hint of stone fruit. The first sip delivers a wave of caramelized sweetness that feels almost buttery, followed by ripe peach in the mid-palate. The acidity is crisp but gentle, more like biting into a fresh apple than the wine-like brightness of African coffees. The finish is clean and short, with a lingering almond warmth that invites the next sip.

How to Brew Costa Rica Tarrazú Coffee

Tarrazú's balanced, sweet profile makes it a natural fit for pour-over and drip. Both methods let the brown sugar and peach notes come through without adding weight. For pour-over, use a medium grind, 200–205°F water, and a 1:16 ratio. A slow, even pour over three and a half minutes produces a cup with excellent clarity and sweetness. For drip, just make sure your machine hits at least 195°F — under-extracted Tarrazú tastes thin and sour instead of sweet and crisp.
