About This Origin

Colombia is the world's third-largest coffee producer and arguably the most consistent. While other origins swing between outstanding and mediocre crop years, Colombia's geography gives it a structural advantage: the country straddles the equator with three distinct mountain ranges (the Cordilleras), creating micro-climates that allow harvesting nearly year-round. That means fresher green coffee arriving at our roastery more frequently than almost any other origin.

Supremo is Colombia's top screen-size grade — beans retained on a size-17 screen or larger. Bigger beans from high-altitude farms develop more slowly, concentrating sugars and producing the smooth, sweet flavor profile that Colombian coffee is famous for. Our lots come specifically from Huila and Nariño, two departments in southern Colombia where altitudes push above 1,800 meters and the combination of volcanic soil, equatorial sun, and cool mountain nights creates ideal growing conditions.

The washed process used here is meticulously controlled. Cherries are hand-picked at peak ripeness, pulped the same day, fermented in tile tanks for 14 to 18 hours, then washed and dried on raised beds or covered patios. This careful handling preserves the bean's natural sweetness while producing the clean, defined cup that makes Colombian coffee such a reliable crowd-pleaser — and such a versatile base for any brewing method you prefer.

How to Brew Colombian Supremo

Colombian Supremo is one of the most forgiving single origins to brew. Its balanced flavor profile and medium body work beautifully across drip, espresso, and pour-over — making it an ideal daily driver. For drip, use a medium grind and let your machine do the work. The caramel and chocolate notes come through clean and consistent, cup after cup.

For espresso, Colombian Supremo shines as a single-origin shot. The natural sweetness translates into a thick, syrupy crema with caramel and cocoa notes that hold up with or without milk. Pull at a standard 1:2 ratio (18g in, 36g out) over 25 to 30 seconds. Pour-over brings out more of the red apple acidity and brightens the cup. Use a medium-fine grind, 205°F water, and a 1:16 ratio for optimal extraction.
