Most cold brew problems start at the bag.
Most cold brew you buy tastes bitter, flat, or both. The issue usually isn't the brewing method — it's the beans. Large commercial roasters over-roast their coffee to mask inconsistencies, and by the time those beans reach your kitchen they're already stale. Stale, over-roasted beans make harsh cold brew no matter how long you steep them.
At Roast Coffee Company, we recommend medium-roast single-origin beans for cold brew. A medium roast preserves the origin character of the coffee — the sweetness, the chocolate notes, the clean finish — while keeping acidity low enough that your cold brew is smooth enough to drink black. That's the test: if your cold brew needs sugar or milk to be enjoyable, the beans aren't right.

How to Make Cold Brew at Home
It takes five minutes of hands-on time and zero special equipment.
Cold brew is one of the simplest brewing methods and one of the most forgiving. Grind your coffee coarse — about the texture of raw sugar. Use a 1:8 ratio of coffee to water (for example, 100g of coffee to 800ml of filtered water). Combine in a jar or pitcher, stir once, cover, and refrigerate for 12–24 hours. Strain through a fine mesh filter or cheesecloth and you're done.
Shorter steeps (12 hours) produce a lighter, more tea-like brew. Longer steeps (18–24 hours) produce a richer, more concentrated result that works well diluted over ice or mixed with milk. If you want a true concentrate for recipes or batch drinks, try a 1:5 ratio and steep for 20+ hours.
